Features and characteristics: Potassium nitrate edible is colorless and transparent square or white particles or crystalline powder with spicy, salty and cool taste. Soluble in water, soluble in liquid ammonia and glycerol, insoluble in absolute ethanol and ether. It is not easy to deliquesce in the air and it is a strong oxidant. It can burn and explode in contact with organic matter and emit toxic gases with pungent smell. When it is co heated with carbon powder or sulfur, it can emit strong light and burn. In the food industry, potassium nitrate edibleis widely used in meat products as color developing agent, color protecting agent, antibacterial agent and preservative.

Application:

In the food industry, potassium nitrate edible is used as chromogenic agent, color protecting agent, antibacterial agent and preservative. For example, it is used as an anti-corrosion agent in cured meat products (such as bacon, cured meat, salted duck, Chinese ham, sausage, etc.), pickled and marinated meat products, smoked, roasted and roasted meat, fried meat, western ham (smoked, smoked and steamed ham), meat enema and fermented meat products. China stipulates that it can be used in meat products, with a maximum dosage of 0.5g/kg and a residue of no more than 0.03g/kg.
